Today, we inspire you with a delicious recipe from Pien (29), mom of Faas (1) this week. Born and raised in Rotterdam. She lives for almost five years with much pleasure in the district Bergpolder (Rotterdam Nord), a nice neighborhood with lots of nice, new hotspots! She works four days as a speech therapist with severely multiply handicapped children. And is the owner of ‘De pan van Pien‘. Sushi is delicious, sushi is hot! But who’s looking forward to roll those rolls all afternoon in the fun? No one! Therefore, this recipe ‘sushi in a bowl’. Everything you love to do in your sushi roll, you now put in a bowl. Note: when the kids join, don’t use raw salmon, but egg or crab sticks for example. Let your kids help you with any mixing, or when they’re older cutting. And be careful with the wasabi!
Ingredients (for 2 people)
- 150 grams of rice
- 150 grams of fresh salmon
- 1 avocado
- half a cucumber
- 1 nori sheet
- soy sauce
Cook the rice according to package directions. Meanwhile, make the wasabi mayonnaise by mixing wasabi and mayonnaise. Cut the salmon into cubes & cucumber and avocado into pieces.
Allow the rice to cool off completely. Add the cucumber, salmon and avocado. Stir well to combine. Divide into two bowls. Garnish with chopped nori, wasabi mayonnaise and sesame seeds!
